Gazpacho! That’s one of my all-time favorite summer foods. I love that you can just take a bunch of tomatos and other garden veggies and make a soup that tastes more and more and more and more delish as the week continues. I might have snuck it in last week. We’ll definitely have it this week.

Menu Plan July Week 5/August Week 1
Monday: Brown Sugar BBQ marinated chicken with grilled vegetables
Tuesday: Creamy Shrimp Rolls with Sweet Potato Chips
Wednesday: BBQ Meatloaf and fresh garden salad
Thursday: BBQ Grilled Ribs with grilled garden veggies
Weekend: Smokey Sweet Potato Burgers with garlic cream and avocado, chips & homemade salsa; Quick Chickpea & Summer Vegetable Stew
*There’s a lot of BBQ on this week’s menu–I recommend making a big batch of sauce that your family loves — pick one of these, make it Monday, and substitute the recipe through the week to save time and money.
Menu Plan August Week 2
Monday: Chicken fajitas, Mexican rice and re-fried beans
Tuesday: Gazpacho Soup
Wednesday: Creamy Orzo with Sausage, baked tomatoes and zucchini
Thursday: Peas & Ham Pasta Salad
Weekend: Lawry’s Cedar Plank Salmon with Pineapple Salsa and Grilled Vegetables; Grilled Steak Dinner with Grilled Romaine Salad
Menu Plan August Week 3
Monday: Grilled Chicken Pitas, grilled corn on the cob, side garden salad
Tuesday: Stacked Vegetable Enchiladas
Wednesday: Grilled Fish Tacos with Peach Salsa and Mexican Rice
Thursday: Mini Greek Turkey Burgers with Cucumber Sauce with a Greek Salad
Weekend: Nectarine & Blue Cheese Salad (might even shred some left over chicken or fish into this one… or cook up a piece of chicken to shred in it); Hot Dog Party–going to let the family pre-suggest some toppings from the many found on this page and go-to-town creating hot dog topped recipes.
Menu Plan August Week 4
Monday: Grilled Lemon Chicken, Grilled Asparagus
Tuesday: Spicy Fish Taco Bowls (salad) (you can make this ahead of time and serve it cold)
Thursday: Basil Pesto Pasta with Zucchini and Mint
Weekend: Grilled Pork Chops with Sesame Slaw; Zesty Buffalo Chicken Meatloaf with side garden salad and Simple Potato Salad
Menu Plan August Week 5
(The way the calendar lays out in 2015, this is really a September week and, for us, school starts! So I definitely like the word easy in some of these recipes. And, without a doubt, I’ll buy the Rotisserie chicken at the grocery store.)
Monday: Chicken Salad Stuffed Tomatoes (grill or bake the chicken ahead of time, or buy a Rotisserie chicken at the grocery store)
Tuesday: Easy Shrimp Linguine
Wednesday: Chipotle Bean Burritos with rice
Thursday: Rigantoni with Grilled Peppers and Onions
Weekend: MYO BBQ Pizza; Labor Day Burgers Party (Burgers, Orzo, Vegetables and more!)
