Can I just tell you how happy I am that I am cooking on the grill again? This weekend’s dinner times were so much more relaxed because of it. No one even complained that we had to wait until 8:30 to eat on Saturday night (because of baseball games). Dinner was perfect because it was grilled. Yay!!

New this week! I added a crockpot meal to Wednesday for this week. We’re spending so much time at the baseball field, that I’m doubling the recipe so that it’s a good grab and go for the weekend, too.
Monday: Sweet Chili Chicken Pizza
Tuesday: Minty Bulgur Salad with Salmon and Cucumbers
Wednesday: Cheesy Veggie and Black Bean Tortilla Casserole
Weekend: Passover Seder (Friday and/or Saturday nights); Top your own hot dogs and barbecue veggies; Grilled Buffalo Chicken Salad,
Bonus! Passover begins Friday night, April 3. For those of us observing, here’s a great Passover menu plan for the full 8 nights. Or adapt the meals, below.
Monday: Spinach & Ricotta Gnocchi with Tomato Sauce (Observing Passover? Try this Passover Spinach & Cheese Lasagna)
Tuesday: Salmon Burgers with Corn Salad or Salmon Croquettes (for Passover) with Greens salad
Wednesday: Marinated Grilled Chicken and Spring Vegetables
Weekend: Andouille Mac & Cheese and Caesar Salad, make your own pizzas; Last night of Passover: Herb-Crusted Rib-Eye Roast and spring vegetables
Monday: Apricot Glazed Ham with Potatoes and Asparagus
Tuesday: Grilled Salmon in BBQ Sauce with zucchini
Wednesday: Best BBQ Pulled Chicken (made in the crockpot), beans and cole slaw
Thursday: Taco Night
Weekend: Hamburgers and Hot Dogs with Corn on the Cob and Summer Veggies; Steak Kabobs
