January Meal Plan

Happy New Year! Hope yours was wonderful! We enjoyed time away from working, a visit to my parents’ new home, and another very exciting New Year’s Eve party. Now, I’m so excited to start 2015! This year, I’m focusing on living a calm, balanced life. One where I work to be a bit more laid back around my kids, hoping that they’ll feel the affect. A year with more balance between work and family, where the computer is rarely on a work-related page around the family.

Having already written the January Meal Plan definitely helps me with the calm-feelings as it eliminates the 5-o’clock pressures of prepping meals when you already know what to make and have done all of your grocery shopping. December/January Week 1

(This is a repeat of the last week from last month. You’ve probably already cooked all of this, right?)

Monday: Rigatoni with Sausage & Tomato Cream Sauce I also add chopped red or green peppers with the onions
Tuesday:Sweet & Sour Chicken with Soba Salad
Wednesday: Jambalaya for a crowd (this is actually the recipe I use for New Years Eve–so if you’re entertaining this week, move Jambalaya to whichever that night will be for you.)
Thursday: leftovers
Weekend: Cauliflower & Chickpea stewBeef & Vegetable Pot Pie

January Week 2

Monday:  Taco Salad with Pinto Beans and Avocado
Tuesday: Herb-Roasted Chicken with Potatoes and Fennel
Wednesday: Slow Cooker Zucchini and Tomato Pasta Sauce over Spaghetti
Thursday: Leftovers
Weekend: Spiced Strip Steak with Carrots and Onions

January Week 3

Monday: Herbed Cheese Stuffed Salmon, Caesar Salad
Tuesday: leftovers
Wednesday: Slow Cooker Pineapple Chicken
Thursday: Philly Cheese Steak Stuffed Peppers
Weekend: Crock Pot Chicken Enchilada Soup, Pizza night, leftovers

January week 4

Monday: Roasted Tilapia and Winter Vegetables
Tuesday: Parmesan Meatloaf with a Caesar Salad
Wednesday: leftovers
Thursday: Crock Pot Chicken la Criolla
Weekend: Ground Turkey Stuffed Peppers (by popular demand flat out begging)

January week 5

Monday: Southwestern Chopped Chicken Salad
Tuesday: Baked Salmon Stuffed with Mascarpone Spinach
Wednesday: Slow Cooker Lasagna
hursday: Balsamic Roast Beef French Dip Sandwich and Crispy Parmesan Zucchini Fries
Weekend: leftovers and Mexican Shrimp Bisque
