I always find Halloween such a difficult night to prepare a meal. We want to carve the pumpkin, not make a mess of our costumes, and we’re so rushed and excited to run out the door for trick or treating to begin! Years ago, we’d order pizzas for friends and neighbors, but the pizza slices got cold before we were back from trick or treating and really hungry. Now, I prepare this an “ghoulash” dinner, something that can be reheated when the troops are truly hungry.

Monday: Easy Beef Lasagna with no-boil noodles and salad
Wednesday: Ginger Shrimp & Rice
Thursday: Chicken & Wild Rice Casserole and carrots
Weekend: Pizza, Chickpea, Spinach & Squash Gnocchi
October Week 4
Monday: Tilapia with Caper-Parsley sauce with Crash Hot Potatoes and Cheesy Broccoli
Tuesday: Parmesean Chicken Bake with sauteed zucchini & tomatoes
Wednesday: Spaghetti & Meatballs, Caesar Salad
Weekend: Chicken Tortilla Soup, Sweet Potato Fritters with Smoky Pinto Beans
October Week 5
Monday: Fish Tacos
Tuesday: Healthy Sloppy Joes with green beans
Wednesday: Make Your Own sandwiches or Chef Salad
Thursday: Ghoulash: Beef, Mac & Cheese (I’ll use ground buffalo meat)
Weekend: Pizza, Seafood Chowder
