Oh how I love the nights when we have nothing to do: no swim team practice, baseball practice, soccer practice, swim lessons, homework, errands… wait, what? When did that last happen?

Tuesday: Philly Cheesesteak Sloppy Joes
Wednesday: Mexican Chicken Casserole
Thursday: leftovers
Weekend: Smoky Beef & Bean Chili, Spaghetti and meatballs

Week 2

Monday: Chicken Parmigiano Soup
Tuesday: Asian Beef with Mandarin Oranges (Slow Cooker)
Wednesday: Salmon Tacos
Thursday: Spinach and Goat Cheese Frittata
Weekend: mini-ranch burgers

Week 3

Monday: Roasted Salmon with Pesto Vegetables
Tuesday: Creamy Spinach Enchiladas
Wednesday: Slow-Cooker Squash Lasagna
Thursday: Leftovers
Weekend: Pizza;  Chicken, Bean & Cheese Quesadillas

Week 4

Monday:  Grilled Pork Chops with Sesame Slaw
Tuesday: Chicken Tacos
Wednesday:  Unstuffed Pepper “Salad
Thursday: leftovers
Weekend: Chicken Tortilla soup and Chef Salad
