Family meal plan: February dinners

Alright, folks. It’s almost here. I’ll be forty in just 8 days. Uh huh. A week from tomorrow. So. Well. That’s it. I’m counting down. I mean… forty. That’s a lot of numbers. That’s a lot of years and experience and… look. I’m not one to write up 40 things I learned in 40 years. Or 40 things I’ll do now that I’m forty. Or forty favorite whatevers. That’s just not me. I’m also not a big reflector. I’m just not.

Really, I just am. I am about to be 40. I’ll let you know how it goes.

Monday: Slow-Cooker Chicken and Pasta Soup
uesday: Rachael Ray Mega Turkey Nacho Dinner
ednesday: Cheesy Veggie & Black Bean Tortilla Casserole
Thursday: leftovers
Weekend: Pizza, Zucchini Lasagna & Salad

Week 2

Monday: Salmon with Yogurt Dill Sauce and side of spinach
Tuesday: SPOT (Sausage, Potato, Onion, Tomato… and cheese) (I can’t believe it’s been so long since I made this!)
Wednesday: Chicken Vegetable Pot Pie
Thursday: leftovers
Weekend: MYO Tacos, Drunken Pork Tenderloin, applesauce & salad

Week 3

Monday: Chicken Tortilla Soup 
Tuesday: Salmon baked in foil with Caesar salad
Wednesday: Three Bean Turkey Chili with baked potato
Thursday: leftovers
Weekend: Cheeseburger Sliders and zucchini fries, Tuna Pasta

Week 4

Monday: Chicken Fajitas 
Tuesday: Crock Pot Beef Stroganoff
Wednesday: Chef Salad
Thursday: leftovers
Weekend: King Ranch Chicken Casserole, Baked Barley Risotto with Butternut Squash
