Doing a little “oh happy day” celebration dance as we just got the call for a 2-hour delay for Monday morning. As we wrapped our visit to the Christmas Tree farm today, the first flakes began to fall and within 20 minutes we had a dusting. It was only around 11, and that dusting was all that was called for for the day, so what a surprise as, very quickly, the snow began to collect and build and, within the hour, we were slipping and sliding along the roadways.
Luckily, I already had the meals planned out (hooray for monthly meal planning!) and we made a quick stop, evergreen attached to the roof of the SUV, at Wegmans to stock up on the necessities… and to reintroduce my husband to a snowy Sunday before the start of an Eagles game. Yep. Now he remembers why it’s such a pain to go!

Monday: Beef Chili
Tuesday: Panko Parmesan Chicken Tenders and Panko Parmesan Zucchini Fingers (follow same recipe for chicken)
Thursday: Quick Pastitsio
Weekend: Extra Easy Lasagna, Quick Fall Minestrone
Monday: Crock Pot Sweet Apricot Chicken with side of fresh veggies
Tuesday: Citrus Salmon with Watercress Salad
Wednesday: Slow-Cooker Beef Stew
weekend: Incredibly Cheesy Turkey Meatloaf with salad; Hanukkah Brisket and Roasted Veggies
(This is Christmas week… so adjust and plan accordingly. Also, don’t forget to include your Christmas morning breakfast casserole in your plans. Here’s my recipe for French Toast Casserole, which can be made Gluten Free and is loved no matter which way you make it. Take note! You must make this the night before you serve it–which makes it perfect for Christmas morning.)
Monday: Steak Fajitas
Tuesday: Butternut Squash Soup with side salad
Wednesday: Chicken with Acorn Squash & Tomatoes
Weekend: Beef & Beer Chili, Slow Cooker Turkey Breast (here are the basic how-to instructions for slow-cooking a turkey breast. This time, I’m adding a can of cranberry sauce and a packet of onion soup.)

Tuesday:Sweet & Sour Chicken with Soba Salad
Wednesday: Beef & Vegetable Pot Pie
Weekend: Cauliflower & Chickpea stew, Jambalaya for a crowd (this is actually the recipe I use for New Years Eve–so if you’re entertaining this week, move Jambalaya to whichever that night will be for you.)
