5 weeks of Meal Planning: August

Way back when I was substituting sixth grade for an extended period, I remember sitting with my former 6th grade teachers (I know… that was crazy, calling Mr. Long, John, and Mr. Muir, Jeff…) at the lunch table and discussing Meatloaf. Yes, that’s what teachers do at lunch. They discuss meatloaf. At least, these teachers did. As I recall, John was doing Atkins at the time (am I dating myself? Atkins was all the rage the year that I graduated grad school.) Of course, we didn’t just discuss meatloaf, like the boring kind where you mix beef, an egg and ketchup and bake it for an hour or so (though, at the time, that’s all I knew about making it. I mean, I was single, living with my parents and substitute teaching. I hadn’t even begun to learn the many facets of meatloaf.)

That conversation continued for at least a week. Every day, someone shared a new meatloaf recipe… all the exciting ways to incorporate and hide veggies, herbs and spices! That’s why I’m really excited that Jenn’s Zesty Buffalo Chicken Meatloaf is on the list this week. I don’t think we ever got this creative in our lunch room discussions, but I wish we had. Maybe Jeff, John, Ruthann, Maureen, Joanne or one of the other 6th grade teachers is following the August Meal Plan and will give it a try.

Menu Plan July Week 5/August Week 1

Monday: Brown Sugar BBQ marinated chicken with grilled vegetables
Tuesday: Creamy Shrimp Rolls with Sweet Potato Chips
Wednesday:   BBQ Meatloaf and fresh garden salad
Thursday: BBQ Grilled Ribs with grilled garden veggies
Weekend: Smokey Sweet Potato Burgers with garlic cream and avocado, chips & homemade salsa; Quick Chickpea & Summer Vegetable Stew

*There’s a lot of BBQ on this week’s menu–I recommend making a big batch of sauce that your family loves — pick one of these, make it Monday, and substitute the recipe through the week to save time and money. 

Menu Plan August Week 2

Monday: Chicken fajitas, Mexican rice and re-fried beans
Tuesday: Radish Gazpacho Soup
Wednesday: Creamy Orzo with Sausage, tomatos and zuchinni
Thursday:  Peas & Ham Pasta Salad
Weekend: Lawry’s Cedar Plank Salmon with Pineapple Salsa and Grilled Vegetables;  Grilled Steak Dinner with Grilled Romaine Salad

Menu Plan August Week 3

Monday: Grilled Chicken Pitas, grilled corn on the cob, side garden salad
Tuesday: Stacked Vegetable Enchiladas
Wednesday: Grilled Fish Tacos with Peach Salsa and Mexican Rice
Thursday: Greekburgers with a Greek Salad
Weekend: Nectarine & Blue Cheese Salad (might even shred some left over chicken or fish into this one… or cook up a piece of chicken to shred in it); Hot Dog Party–going to let the family pre-suggest some toppings from the many found on this page and go-to-town creating hot dog topped recipes.

 

Menu Plan August Week 4

Monday: Grilled Lemon Chicken, Grilled Asparagus
Tuesday: Spicy Fish Taco Bowls (salad) (you can make this ahead of time and serve it cold)
Wednesday: Toastachos
Thursday: Basil Pesto Pasta with Zucchini and Mint
Weekend: Grilled Pork Chops with Sesame Slaw; Zesty Buffalo Chicken Meatloaf with side garden salad and Simple Potato Salad

 

Menu Plan August Week 5

Monday: Chicken Salad Stuffed Tomatoes (grill or bake the chicken ahead of time, or buy a Rotisserie chicken at the grocery store)
Tuesday: Easy Shrimp Linguine
Wednesday: Chipotle Bean Burritos with rice
Thursday: Rigantoni with Grilled Peppers and Onions
Weekend: MYO BBQ Pizza; Labor Day Burgers Party (Burgers, Orzo, Vegetables and more!)
