The summer, while officially only half over, is rushing to an end around here as I plan menus for the entire month of August. Last week, a copy of Rachael Ray’s July/August issue, headlining Get Your Grill On!, caught my attention. Grilling. I love grilling. I love how easy and fast it is. And how super easy the clean up is. And, short of over cooking–and I mean really, really overcooking– it’s hard to mess up a meal on the grill. So, I’m inspired. At least half of August’s menu will be grilled. If you’re not a griller, no worries, because the other half makes room for rainy days, too hot to stand by the grill days and there are a few heat-free meals for those really, really hot days.
You’ll also find a lot of meals that include summer vegetables. My garden is just staring to overwhelm me with peppers and tomatoes. If you aren’t a gardener, then scout out your local farm market or farm stand… or just buy fresh and local at the grocery store. Because, yum! There is a serious difference when you taste fresh veggies. (And if you’ve never gardened before but want to start, check out my friend Angela’s book Backyard Farming on an Acre (More or Less) with all you need to know about starting your garden. Believe me, I don’t have an acre, but I have a cute little garden that will provide many, many meals this month.)
I also left leftovers off the menu this month. Shocking, I know! Because we’re mostly out of camp and school this month, we’ll eat a lot of leftovers for lunch. But if your family has a need for leftovers, scratch one meal off the menu each week. Also, as usual, I only planned for 6 nights of meals each week (just two on the weekends, rather than three). So shift around a leftover night, order pizza or go out and let someone else cook!

Menu Plan July Week 5/August Week 1
Monday: Brown Sugar BBQ marinated chicken with grilled vegetables
Tuesday: Creamy Shrimp Rolls with Sweet Potato Chips
Wednesday: BBQ Meatloaf and fresh garden salad
Thursday: BBQ Grilled Ribs with grilled garden veggies
Weekend: Smokey Sweet Potato Burgers with garlic cream and avocado, chips & homemade salsa; Quick Chickpea & Summer Vegetable Stew
*There’s a lot of BBQ on this week’s menu–I recommend making a big batch of sauce that your family loves — pick one of these, make it Monday, and substitute the recipe through the week to save time and money.
Menu Plan August Week 2
Monday: Chicken fajitas, Mexican rice and re-fried beans
Tuesday: Radish Gazpacho Soup
Wednesday: Creamy Orzo with Sausage, tomatos and zuchinni
Thursday: Peas & Ham Pasta Salad
Weekend: Lawry’s Cedar Plank Salmon with Pineapple Salsa and Grilled Vegetables; Grilled Steak Dinner with Grilled Romaine Salad
Menu Plan August Week 3
Monday: Grilled Chicken Pitas, grilled corn on the cob, side garden salad
Tuesday: Stacked Vegetable Enchiladas
Wednesday: Grilled Fish Tacos with Peach Salsa and Mexican Rice
Thursday: Greekburgers with a Greek Salad
Weekend: Nectarine & Blue Cheese Salad (might even shred some left over chicken or fish into this one… or cook up a piece of chicken to shred in it); Hot Dog Party–going to let the family pre-suggest some toppings from the many found on this page and go-to-town creating hot dog topped recipes.
Menu Plan August Week 4
Monday: Grilled Lemon Chicken, Grilled Asparagus
Tuesday: Spicy Fish Taco Bowls (salad) (you can make this ahead of time and serve it cold)
Thursday: Basil Pesto Pasta with Zucchini and Mint
Weekend: Grilled Pork Chops with Sesame Slaw; Zesty Buffalo Chicken Meatloaf with side garden salad and Simple Potato Salad
Menu Plan August Week 5
Monday: Chicken Salad Stuffed Tomatoes (grill or bake the chicken ahead of time, or buy a Rotisserie chicken at the grocery store)
Tuesday: Easy Shrimp Linguine
Wednesday: Chipotle Bean Burritos with rice
Thursday: Rigantoni with Grilled Peppers and Onions
Weekend: MYO BBQ Pizza; Labor Day Burgers Party (Burgers, Orzo, Vegetables and more!)
