I found this website about 2 years ago and every now and again I go back and examine “what the world eats.” It’s kind of a fresh look that helps us to realize just how lucky, healthy or unhealthy we may be in our current lifestyle.
This week we’re back to school and completely off any schedule as I have PTO events, the kids have baseball and gymnastics (ballet and football start next week) and we have a lot of orientations. So, I selected a few easy meals to get us through our adjustment afternoons and early evenings.
Menu Plan September week 1
Monday: leftovers from our Labor Day get together with friends
Tuesday:Fish Tacos with peppers and yellow rice
Wednesday: Turkey Salad with Manchego
Thursday: Classic Beef Stew and baked potatoes (Classic Beef Stew from The 150 Best Slow Cooker Recipes by Judith Finlayson)
Weekend: Grilled shrimp with lemony potato salad and asparagus
Menu Plan for September week 2
Monday:Rigatoni Peperanota (make in the afternoon and serve after football)
Tuesday: Slow Cooker Spaghetti Bolognese
Wednesday: Cajun Skirt Steak with Creamed Corn
Thursday: Spinach & Goat Cheese Frittata
Weekend: Chicken & Pepper Fajitas with Mexican rice
