As you know, summer is my favorite season to cook. I grill everything from fruit to vegetables to meats to pizzas. I love cooking with fresh vegetables and fruits, and chilled summer soups are some of my favorites. In fact, at my July 2000 wedding, we served a chilled fruity soup.
April shared a Simple Summer Gazpacho with me last week. She says she ate it all day. I’ve been making a gazpacho that I first read of in the book Too Many Cooks by Emily Franklin. But the word “simple” got my attention for my plans this week.
