Menu Planning with an empty refrigerator

I have to say, this weekend really rocked us. I mean, it rocked. Good family time, lots to do… but it rocked us. You know that feeling when you’ve been cleaning your house for hours and you look around and the place is a wreck? You get that sinking, discouraging growl that makes you want to cry out loud “what have I been doing for the past 4 hours?!” That was me around 1 pm yesterday.

We came home from a family beach day on Sunday night–avoided all traffic and carried two frazzled children off to bed. Big stayed downstairs for a minute and fed the hamster 2 carrots–the nocturnal’s nightly breakfast.

Around 9:15 am, while Little was bathing and we were cancelling our plans for a picnic due to an unexpected heatwave and overdue exhaustion, the husband began preparing breakfast. Or so he thought. Rather, he found the refrigerator door open. At first, it was easy to blame Big–he was the last to open the door. But upon further examination, we found the door to be broken, the closure part not attached and the suction not on correctly. It was, it seemed, an innocent error. So what was supposed to be the end of a weekend of relaxation and fun family time, turned, instead, to a final day “vacation” filled cleaning.

About 4 hours later, parched, I opened the partially repaired door (we’re awaiting a part in the mail) to be reminded that there was no food, no drink.

Ahhh. Menu planning from scratch.

We decided that rather than refilling the refrigerator, we’d start with the bare minimum. We have two crazy last weeks of school with plans nearly every night, so there won’t be a lot of meals to prepare. And the children have very few lunches at school–which meant that I didn’t need to shop for much school lunch food.

A late night trip to the grocery store and my fridge is still nearly empty.

On the menu this week:

Tuesday: Warm chicken and butter bean salad
Wednesday: Middle Eastern Mezze Plate
Thursday: leftovers
Friday: Spicy crunchy chicken wraps
Weekend: Pizza picnic and Chile-Rubbed Grilled Chicken with Salsa and grilled vegetables plus burgers for the kids

This week’s menu plan uses a lot of recipes from Food Network Magazine (I picked it up last week.) I’m considering a subscription. What do you think? Are the recipes easy enough for a busy mom or are they too complex?
