Menu Plan: Thanksgiving Week

Last year, I prepared my first Thanksgiving and it was a hit (just go with it… I really enjoyed hosting.) This week, we’re joining family for Thanksgiving Dinner but hosting a small family Open House the next day. So while some of you are preparing Thanksgiving dinners and sides and desserts, I’m preparing for a post-Thanksgiving party. Therefore, I’m keeping this week’s meals simple.

Monday: Sloppy Joes and salad
Tuesday: Slow-Cooker White Bean and Kielbasa Stew 
Wednesday: Honey Soy Glazed Salmon with Spinach and Peppers
Thursday: Happy Thanksgiving!
Friday: Party menu to come
Weekend: leftovers, including Turkey Reuben with Cranberry Sauce and Empanadas (made with turkey, beef or salmon)
