Who doesn’t have leftovers after Thanksgiving? We love them. In the past, we’ve just snacked for lunches and dinners for the following week and called it our meals. This year, however, we’ll be snacking on a few other ideas, thanks to Bottom Dollar Food and Chef Dan D’Angelo who provided me with recipes at an event last weekend.
As the cooking contest winner, I wanted to share my Thanksgiving Leftover Empanada recipe. Thanks to Chef D’Angelo for creating the base recipe. (I added the cheese which made it a bit creamier and consistent.)
Ingredients
- about 2 cups leftover turkey, diced or shredded, or deli turkey
- refrigerated tubed biscuits (about 10 or 12)
- swiss cheese, sliced from deli or shredded, about a handful
- 1-2 cups mashed potatoes or mashed sweet potatoes
- 1-2 cups stuffing
- about 1/2 to 1 cup turkey gravy
- 1 egg
Get Cooking
- In a medium bowl, mix turkey pieces, gravy and a handful of cheese, set aside;
- flatten biscuits and spread on a parchment sheet over a cookie sheet
- spread a teaspoonful of mashed potatoes on half the biscuits, leaving about a centimeter to a half inch around the side
- layer a teaspoonful of stuffing over the mashed potatoes
- layer the turkey mixture
- cover each with a biscuit, close the two biscuits and place pressure with either fork tines or finger tips
- whisk egg with fork and brush over top
- bake for about 10-15 minutes, until tops are bronzed
